Was doing so good...

Once I found out that is was National Blogging Month I wanted to participate and blog everyday, well last night I didn't get around to it, oh well, maybe I'll just have to post extra on other days.

On Friday I made my first homemade cheesecake and it was yummy. I love cheesecake and this one was pretty easy to make so I am including the recipe for you here:

New York Style Cheesecake
Ingredients
1 cup crushed honey graham crackers (about 6 grahams)
3 Tbsp. sugar
3 Tbsp. butter or margarine, melted

5 pkg. (8 oz. each) Philadelphia Cream Cheese, softened
1 cup sugar
3 Tbsp. flour
1 Tbsp. vanilla
1 cup sour cream
4 eggs
1/2 C seedless strawberry jam

Preparation
Line a 9x13 pan with foil leaving enough over the sides to make a handle.

Preheat oven to 325°F. Mix crumbs, 3 Tbsp. sugar and butter; press firmly onto bottom of pan. Bake 10 min.

Beat cream cheese, 1 cup sugar, flour and vanilla with electric mixer on medium speed until well blended. Add sour cream; mix well. Add eggs, one at a time, mixing on low speed after each addition just until blended (this is the key to keeping it from cracking on top). Pour over crust. Sprinkle dollops of jam and then use a knife to swirl the jam into the cheesecake.

Bake 40 min. or until center is almost set. Cool completely. Refrigerate at least 4 hours or overnight.

Looks very pretty. That would be a lot of cheesecake though. I sure hope you shared it with someone. Otherwise your diet is about to go out the window. Five packages of cream cheese...wow, that's a lot, but I guess if you want to fill a 9x13 pan, you gotta do what you gotta do.
